Herb-Infused Gummies with Coconut Oil
Bright, chewy gummies made with herb-infused coconut oil. A little sunflower lecithin keeps the oil blended in, so every gummy sets smooth and even.
Ingredients
- ½ cup fruit juice or water
- ½ tsp sunflower lecithin (liquid or powder)
- 1 oz unflavored gelatin (about 4 envelopes)
- 1 box (3 oz) flavored gelatin
- 2–4 tbsp herb-infused coconut oil, melted
Instructions
- Lightly grease your gummy molds and set them on a tray.
- In a small saucepan over low heat, whisk the juice and lecithin together until warm.
- Sprinkle in the unflavored gelatin, then the flavored gelatin, whisking constantly until fully dissolved. Do not let it boil.
- Whisk in the infused coconut oil and keep whisking for 2–3 minutes, until the mixture looks smooth and no oil floats on top.
- Use a dropper to fill the molds quickly before the mixture thickens.
- Refrigerate 1–2 hours until firm, then pop the gummies out. For a chewier texture, let them air-dry on parchment for 24 hours.
