Herb-Infused Banana Bread

Moist, tender banana bread with a subtle herbal lift. Perfect with coffee or as a cozy snack.

Ingredients

  • ½ cup herb-infused butter, softened
  • ½ cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 3 ripe bananas, mashed
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ tsp cinnamon (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
  2. Cream butters with sugar until fluffy; beat in eggs.
  3. Mix in mashed bananas and vanilla.
  4. Sift in flour, baking soda, salt, and cinnamon; mix just to combine.
  5. Bake ~55 minutes until a toothpick comes out clean. Cool before slicing.

Storage: Wrap well and store up to 4 days at room temp or freeze for 2 months.
